I&#039;m actually refining the water trick. I&#039;m finding that it takes very little moisture, even just drops, to achieve the effect.

In the past I&#039;ve often covered my eggs in the fry pan, to cook the top, but with the little bit of moisture it works even better.

Omlettes?  Ok... the secret to a nice omelette is patience and a med-low to low heat.  If you like extra fluffy ones, then separate the whites from the yolks - whites in a big bowl &#038; the yolks in a small one.  Use a whisk &#038; start whippin&#039; those whites, not to meringue, but whoop &#039;em good, eh?!  You&#039;ll see them change color as they fluff.  Then add the yolks back in and a teeny bit of milk or water even &#038; mix well.  
Fry pan pre-heated up to medium, eggs poured in, then add whatever you like... ham &#038; cheese, tomatoes &#038; spinach, onions &#038; peppers, walleye cheeks and parmesan... whatever you love &#038; want.  Reduce heat.  Cover pan and relax some... wait for it to cook most of the way thru before trying to fold it in half. 
The low heat is necessary bc it takes so long to cook thru.  Gotta have patience cuz you don&#039;t want burnt outside &#038; raw / runny inside do ya now?
Hint:  I find that if heat-up or cook all the things I&#039;m putting into the omelette ahead of time, it does cook a little quicker. 

Ha!  I shit you not, after writing all of this, I think I&#039;ll be making an omelette tomorrow for breakfast.  Oh yes.  Cheers.

Yes, less water, a little goes a long way. 
 I have never measured it.  I just grab a bit out of the faucet using the lid as a spoon, then pour it along side the sizzlin&#039; eggs, cover, watch. 
Your spatula should work real easy-like when they&#039;re done... snatch those eggs right out of the pan &#038; onto your parmesan grits... 
could use a little piece of bacon or perhaps a sausage patty... 
and a thick slice of sourdough wheat bread, buttered.  
Some fresh coffee.  

Ah, some the simplest things in life are actually quite grand, ya know?
